When it comes to Japanese food, Las Vegas has no shortage of options -- especially when it comes to ramen. Every part of town has its own ramen shop -- and in Chinatown, you can't even go one block without running into at least five different places that serve ramen or specialize in it. Many well-known names line that stretch of Spring Mountain, and everyone swears by their own favorite place. For me personally, however, my favorite ramen place is one that hasn't been open for as long but is on point with their flavors and ramen game.
Ramen Hashi specializes in Tokyo-style ramen and has been open for just under two years -- but they've been doing it right for such a short amount of time, as you can see by the Yelp rating! When you arrive, you're given a paper slip where you basically fill out your ramen order. Their menu is limited in that they only serve various types of ramen and a chashu pork rice bowl -- but that simplicity is why they're so good. The small menu allows them to focus specifically on ramen, and you can taste that quality in each bite. The seating is such that you can see into the kitchen and watch them make your ramen order, as well.
One of their most unique traits is that unlike most ramen restaurants in town, they focus specifically on chicken broth rather than pork broth. Even their most "tonkotsu"-like broth, the tori paitan, is made specifically using chicken. For me, I actually like the chicken-based broths more than the pork broths because they're lighter and thus allow you to fully taste each ingredient in the soup, whereas with pork broths the fatty richness of the broth can sometimes be overwhelming.
My to-go order here is the shio ramen with black garlic oil and extra pork belly and eggs -- and I never regret it! A bowl full of light but flavorful chicken broth, the bite of scallions and bamboo shoots, tender but firm noodles... and then mixed with fragrant and pungent oil plus deliciously tender pork and soft-boiled eggs. This is, to me, a spectacular bowl of food, and I consider it even better than Nevada's fan favorite of Monta Ramen precisely because the flavors of each ingredient come through so clearly! The chicken-based broth also is great in that you don't feel overly stuffed when you finish eating, either.
As I mentioned before, Ramen Hashi really only focuses on ramen for their offerings -- but you can tell that they knock this one out of the park with just how clean their ramen tastes. But don't take my world for it -- why not come to Ramen Hashi yourself and taste the difference? -

Out of all the ones ive been to in Vegas this one takes the cake
The Ramen always comes out beautiful and the server will always be in front of you whenever you need something.
The atmosphere is really pretty and everything is clean.
The bathroom is nice and tidy nothing wrong there.
The ramen is always yummy and appetizing, they have a number of condiments for you right in front of you. They have everything you need in front of you, its awesome I highly recommend!!

Funny story.. I came with a friend, and I didn't want any food that had chicken breast. And looking at the menu, most of the noodles/broth had chicken breast.. but we still stayed.. but the noodles are delicious!
The lady kindly explained how to order the noodles, and if the noodles weren't cooked much that they would take it back and make sure to fully cook it. And, I really appreciate this kind of service.

Mood- ramen
Upon entering was quickly greeted and asked if we wanted food for there or to go. We opted for there.
We were sat at the counter and given a paper menu to fill out. 1. Type of ramen. 2. Toppings. 3. Drinks . We opted for the Miso, extra sweet corn, and one with black garlic. You can adjust the spice level of your food as well.
On the counter it has plastic cups, and carafe with ice cold water, plus all of your utensils and napkins.
The food was brought out relatively quick. The broth had a great flavor to it. The noodles are made in house.
Interior is counter style seating. It is not enormous but can seat several people. Pricing is reasonable. Service is very hospitable.

I used to live in Japan so when I walked in this restaurant I was immediately taken back to the cool ramen shops I frequented. The service is just like in Japan where you sit at the counter and your order is taken and the ramen chef will make it. There are not a lot of choices, but I feel that's what makes it good. You have a few broth flavors to choose from and different toppings you can customize and that's it. Simple and delicious. The noodles are on point, not mushy and not undercooked. I've had plenty of mushy ramen noodles from other places so I was actually glad I decided to try another place in search of my go-to ramen spot. Finally found it!!
